Thanksgiving Prep/Recipes

Well, it is the eve of Thanksgiving which means a lot of cooking and baking is to be done. I will be baking a Salted Caramel-Chocolate Pecan Pie that was featured in the November 2013 Southern Living.
I will go ahead and say I have never made a Pecan Pie before but since it is a Thanksgiving day staple I decided I would try this year. I love baking so I have to admit I am thrilled but at the same time a little nervous for the challenge. I usually always bake desserts for Thanksgiving and Christmas. In case you missed it last Thanksgiving I put a spin on one of my favorite holiday pies with this Crumb Topped Apple Slab Pie.
 It was basically a combination of a tradition apple pie and a apple crisp. It was rather simple to make and I would recommend it to anyone wanting to give a modern twist to the traditional apple pie. The recipe for this can be found below:
 
Crumb Topped Apple Slab Pie
 
Ingredients:
 2 1/4  cups  all-purpose flour
3/4  teaspoon  salt
 2/3  cup  butter-flavored shortening
8 - 10  tablespoons  cold water
2/3  cup  sugar
1/3  cup  all-purpose flour
1  teaspoon  ground cinnamon
3 1/2  pounds  tart cooking apples (such as Rome Beauty or Granny Smith), peeled, cored, and cut into 1/4-inch-thick slices (10 cups)
 
Crumb Topping:
1  cup  quick-cooking rolled oats
1  cup  packed brown sugar
1/2  cup  all-purpose flour
1/2  cup  butter
1/2  cup  pecans
 
Directions:
     1. In a large bowl, stir together quick-cooking rolled oats, packed brown sugar, and all-purpose flour. Using a pastry blender, cut in butter until topping mixture resembles coarse crumbs. Stir in chopped pecans.
 
2. Line a 15x10x1-inch baking pan with 18-inch-wide foil, extending the foil up over the edges of the pan; set aside. For dough: In a large bowl, stir together the 2-1/4 cups flour and the salt. Using a pastry blender, cut in shortening until mixture resembles coarse crumbs. Sprinkle 1 tablespoon of the cold water over part of the flour mixture; gently toss with a fork. Push moistened dough to side of bowl. Repeat, using 1 tablespoon cold water at a time, until all of the flour mixture is moistened. Using your fingers, gently knead the dough just until a ball forms.
 
3. Preheat oven to 375F. On a lightly floured surface, roll dough into a 19x13-inch rectangle. Wrap it around the rolling pin; unroll it into the prepared baking pan. Ease dough into the pan and up the sides, being careful not to stretch it. Trim dough to 1/2 inch beyond edge of pan. Fold dough edge over and flute as desired.
 
4. In an extra-large bowl, combine sugar, the 1/3 cup flour, and the cinnamon; add apples. Toss lightly until apples are coated. Spoon apple mixture into dough-lined pan; spread evenly. Sprinkle with Crumb Topping (pan will be full).
 
5. Bake for 40 to 45 minutes or until apples are tender. If necessary to prevent over browning, cover top with foil for the last 5 to 10 minutes of baking. Cool slightly in pan on a wire rack.
 
6. Serve warm or cool completely. Cut into rectangles. Makes 25 servings

Weekend Favorites

- Friday night was Jay's last SAE Semi-Formal -


- Saturday Jay and I ran some errands and did a little Christmas shopping too! -


- Saturday was my long running day for my half-marathon training which means that I needed to run 6 miles. I have to admit I was nervous and scared that I would not be able to make it. But it turned out great! -


- It is starting to look a lot like Christmas around my house here in Starkville and around my parents house back home. -

Santa's Helper

Since Santa will soon be on his way it is time to make the final decisions on my 2013 Christmas list. I have been thinking of things to ask for a lot in the last week and while I have picked a few things it seems I need your help making a decision on one of the presents on my list. I have been loving the Rebecca Minkoff Mini MAC crossbody handbag so it is no surprise that it would be making it's appearance on my list. The only dilemma I am having is trying to pick a color out of all the colors of the rainbow that these bags come in. That is where you come in!

Crock-Pot Pot Roast

Yesterday the weather here in Mississippi decided that it was going to continuously drop throughout the day with a low of 26 degrees that night. Well, with the weather getting chilly it made me want to make a cozy southern meal. I figured I would try to make a Pot Roast in the Crock-Pot since I was busy all day until 5:30. During my one hour lunch break I rushed to the grocery store and picked all the ingredients that I would need and threw it all together, set it on high for 6 hours. This was my first time making a Pot Roast and I was very happy that it turned out wonderfully! If you are interested in trying it look below for the recipe!

Ingredients:
1 can of French onion soup
1 can of cream of mushroom soup
1 packet of pot roast seasoning
1 1/2 cup of water
pot roast
baby carrots
4 red new potatoes
1 white onion
 mushrooms
flour

Directions:
1. Brown the pot roast on all sides in an iron skillet
2. Combine the first 4 ingredients together in the Crock-Pot
3. Cut potatoes and onion into chunks
4. Place all ingredients into the Crock-Pot and set it on high for 4-6 hours
5. Within the last 30 minutes add the flour to turn the sauce into more of a gravy
6. Serve and Enjoy!

Runaway Baby

I have always said that I want to run a half marathon and eventually a full marathon one day. Well, I have decided that I am finally going to do it. I am trying to mentally prepare myself to keep running for 13.1 miles. I have been told that it is more mental that it is physical by the time you actually get to the race. I am planning on running my first half marathon in January or February! But don't you worry I will keep you updated on my training and which one I sign up for! Below is the 6 week training plan I am going to be following up until my race.

Weekend Favorites

- Going to Mistletoe Marketplace with my mother and grandmother Friday night to do a little shopping for Christmas gifts -
 
- Eating supper at Local 463 with Jay, his sister, and his dad to celebrate his dad's birthday! Jay and I both got the Redfish463 which was amazing, I would recommend it to anyone planning to go. Also, we had to get dessert to celebrate his birthday so I picked the Pound cake that was topped with lemon curd, whipped cream, and fresh strawberries! But honestly everything on the menu is to dead for here! -
 
- Sunday my mom and I stopped by Callaway's Home and Garden for their Christmas Open House to see all their wonderfully decorated Christmas trees. I have decided I am going to start decorating for Christmas early this year, I mean why not? -
 
- Lastly, the weekend ended with a great 49-17 win for the New Orleans Saints against the Dallas Cowboys. WHO DAT!! -
