Homemade Orange Sweet Rolls

This past weekend Jay and I went to Cold Water, Mississippi to a friend's cabin. I thought what would be more perfect than some Homemade Orange Sweet Rolls for breakfast Saturday morning. I have had the Pillsbury brand Orange Sweet Rolls but have never tried to make them myself. Well turns out this recipe is not very hard but just a little time consuming since the homemade dough takes two and a half hours to rise but other than that it is fairly quick. An added bonus to this recipe is that you could make these ahead of time and put them in the fridge or freeze them for a few months. These would make a prefect Christmas morning breakfast treat! P.S. The recipe seems very complicated because there are a lot of steps but that is only because it is very detailed which makes them easy to make.

Cinco De Mayo Salsa Recipe

This is the easiest salsa recipe that doesn't need any cooking. All you need to complete this recipe is just a blender! So grab your margarita and corn chips and get ready to celebrate Cinco De Mayo!
Cinco De Mayo Salsa:
Ingredients:
1 (28-ounce) can fire-roasted diced tomatoes
½ large white onion, roughly chopped
2 cloves garlic, roughly chopped
1-3 jalapeno peppers, roughly chopped
½ cup chopped fresh cilantro
¼ teaspoon ground cumin
1 lime, juice and zest
½ teaspoon salt
¼ teaspoon ground black pepper

Directions:
1. Add all ingredients to the container of a food processor or blender.
2. Pulse until well-combined and it reaches the consistency you prefer.
3. Allow flavors to combine by letting the salsa rest about 15 minutes before serving.
4. Store any remaining in an airtight container in the refrigerator.

New York City Anniversary Trip

Two weekends ago Jay and I traveled to New York City for the weekend to celebrate our four year anniversary. Despite the delayed flights and the rainy weather it was still a great trip. We did some shopping, saw a broadway show, and of course ate amazing food. We saw my favorite show of all time The Phantom of the Opera! I had never seen it on Broadway before, but it turned out to be better than I was ever expecting! I couldn't have been more thrilled and in love with it than I was.

As I mentioned earlier we ate at some amazing places and our favorite had to be Becco. I would highly recommend this to anyone traveling to the city. Jay and I both enjoyed veal dishes at Becco that were amazing and melted in your mouth! We also ate at Freeman's which was very romantic and tasty. I would love to spend a snowy night here enjoying drinks and their Hot Artichoke Dip with Crisp Bread. I would suggest if you go there make sure to try this appetizer because it is great comfort food with a glass of red or a beer.

After the rain passed it got chilly and windy in the high 40s but we loved it because it actually felt like fall and was perfect for walking around the city and Central Park before we boarded a plane back to Mississippi. We will be making a trip back to the city again in 2015 with his family for our annual family trip so if you have any suggestions of things to do and places to eat let me know! Creamy Spinach and Artichoke Dip

Everyone loved and raved about how good this Homemade Creamy Spinach and Artichoke Dip was Saturday at the tailgate. I had never made Spinach and Artichoke Dip before this past weekend. I highly suggest if you need to make a dip for a tailgate or any type of party this is the perfect one. It is fairly quick and does not take any skill to successfully make it! Enjoy!

Creamy Spinach and Artichoke Dip:
Ingredients:
1 10oz package of frozen chopped spinach (thawed and drained)
1 14oz can of artichoke hearts (drained and chopped)
1 8oz package of cream cheese (softened)
2 tbsp. sour cream
2 tbsp. mayonnaise
1/2 cup shredded parmesan
1/2 tsp. garlic salt (or to taste)
a dash of cayenne pepper (or to taste)


Directions:
Preheat oven to 400 degrees.
In a medium bowl, warm cream cheese in microwave for about a minute or as long as it takes to soften.
Add spinach, artichokes, sour cream, cream cheese, mayo, and parmesan cheese.
Mix well and add garlic salt and cayenne pepper to taste.
Place in an oven safe dish and bake in the oven for about 20 minutes or until top is toasty.
(Optional: I baked mine on broil for about 5-10minutes to give it a toasted top)
Serve with bread or chips.

Tailgate Hostess

Saturday was my first time to host a MSU Tailgate for the game against Southern Mississippi. Even though it was rainy it still turned out great and I learned some do's and don'ts after this game. Despite the rain the Mississippi State Bulldogs still won, with a final game score of 49-0! Way to go Bulldogs! We are planning on trying to host another tailgate this coming Saturday but we will just have to see what the weather decides to do. I hope you all had a great long weekend!
