Peach Berry Crumble

Summer time means fresh fruit and vegetables which in turn lead to amazing dishes. After going to the produce stand I frequent here in Ridgeland I decided it was time to use some fresh peaches and make a summer time dessert. This Peach Berry Crumble taste absolutely amazing especially with vanilla ice cream but the best part is this recipe is very simple and takes only 40 minutes. Well lets get down to the recipe!


Peach Berry Crumble:
Ingredients:
3 cups fresh peaches
1 cup fresh blueberries
1 cup fresh strawberries
1 large egg
1 large egg yolk
1 cup sugar
3/4 cup all purpose flour
1/2 cup uncooked regular oats
1/4 tsp kosher salt
1/2 cup butter (melted)
vanilla ice cream

Directions:
Preheat oven to 375 degrees.
Place first 2 ingredients in an 11x7" (or 2qt) baking dish.
Stir together egg, egg yolk, and next 4 ingredients together with a folk until mixture resembles coarse meal.
Sprinkle over fruit; drizzle melted butter over topping.
Bake 40-45 minutes or until light brown and bubbly.
Let stand for 10 minutes; serve warm with vanilla ice cream on top.

*Makes 6 to 8 servings

Striped Out

Whether you are heading to the beach or the pool this summer Belk has some stylish towels for great prices. This summer I am loving all the different striped patterns. New Beginnings

I have recently graduated in May and since then plans as far as my future have changed. I was planning on taking the MCAT and applying to Medical Schools in the Fall. Well I have decided that I want a family and a life and those two things don't work to well if I am planning on being a doctor. One day I woke and just knew that it wasn't right for me or my future. I have decided that I will be applying to Nursing School now instead! I am thrilled about this change because I will be able to have a profession in the field that I want and still have a life and a family! My overall plan is to first become a RN (registered nurse) then after that decide how much further I want to take it. I believe that at this point I think I want to go as far as Nurse Practitioner. I thought it was time to let y'all know the new path that I have chosen for my life. If you have any words of advice feel free to leave a comment! See you tomorrow!

H&M Opening

Finally Mississippi has an H&M! I could not be more thrilled that we finally have one and it is in my hometown. If you are like me then you always have to stop into one when traveling or sometimes even pick your destination because there is one there. I have to say I have done both and I am not ashamed. I love H&M because they have trendy pieces that are very reasonably priced. I attended the grand opening of their new 24,000 square foot store in Northpark Mall in Ridgeland on June 5th. The turnout was more impressive than I had expected from the DJ to some grand opening deals it was definitely worth the wait. I hope they love their new home here in Mississippi because I love them here! See you tomorrow.

If Walls Could Talk

About two months ago I mentioned I was getting ready to assemble a gallery wall for my house. Well unfortunately that didn't happen there but it has finally come to life in my new place! I am still in the process of getting things moved in but I am so happy to have my gallery wall up. I wanted mine to have personality and not just be a collection of pictures. I made sure that mine had images that represent Mississippi State University and my initials to make mine more personal. Along with being personal I wanted it to add pops of color to the room and I believe that it has successfully done so. Anyways I hope you like it as much as I do and I promise there will be more features to come a little later! See you tomorrow!
Mozart wasn't too interested in the process so he did his usual thing and stole my socks. I think someone just wanted attention.
