Summer Blueberry Crisp

Blueberries are the perfect summer fruit. I have been loving them so much this summer that I will be posting another blueberry dessert recipe next week also! This "Summer Blueberry Crisp" is perfect for a summer night because it is extremely easy to throw together and takes only 45 minutes total from prep to table. This recipe is also gluten free which makes it just a little lighter but still heavy on flavor. Be sure to check out the recipe below and I hope to see you here again tomorrow. 

Summer Blueberry Crisp:
Ingredients:
1 cup old fashioned oats (use gluten free oats to make this gluten free)
1/2 cup almond meal
1/3 cup sliced almonds
1/4 cup maple syrup
3 tbsp melted coconut oil
1/2 tsp salt
5 cups fresh and washed blueberries
2 tsp freshly-squeezed lemon juice
2 tsp lemon zest

Directions:
1. Preheat oven to 350 degrees F.
2. Add oats, almond meal, almonds, maple syrup, coconut oil, and salt to a mixing bowl, and toss until combined.
3. Set aside.
4. Pour blueberries into an 8x8inch baking dish. 
5. Top evenly with lemon juice and lemon zest, and toss until combined and lightly coated. 
6. Sprinkle the oat crisp mixture evenly on top of the berries.
7. Bake for 35-40 minutes, or until the topping is crisp and golden and the fruit is bubbling. 
8. Top with vanilla ice cream or whipped cream and serve immediately.

Happy Fourth of July

Happy Fourth of July! Jay and I are heading back to New Orleans again this year to celebrate with our friends down there since we haven't seen them in a few months. We cannot wait to have a little weekend trip but I have to admit I am a little worried because this is the first little trip that we have taken since I started nursing school. I am really only worried because this semester we have a test every Friday and Monday so I need to make sure I still study a little while being out of town. Any luck you can send my way would be greatly appreciated! Anyway I hope you all have a wonderful long weekend! See you Monday!

July Birchbox

Yes you read that correct July Birchbox not August. Since moving a few things have been delayed and receiving my Birchbox to my new address was one of them. Birchbox is one of the things I look forward to every month because it is always a surprise what will be in it. Anyway lets get down to business.
July's box included some of my new favorite beauty products. I just took my hair blonder last Friday and the color preserving shampoo and conditioner by Bain de Terre is amazing. This shampoo and conditioner leaves my hair feeling silky smooth and not to mention very shiny. I absolutely love it and plan on ordering the full size bottles, especially because you cannot beat the price of them. The full size shampoo is $12 while the full conditioner is only $13.50, these are the most inexpensive color protecting shampoo and conditioners I have ever found and loved. Next up is the Gardenia scented Harvey Prince perfume. Gardenia is one of my favorite scents and especially in the summer. Lastly, everyone had been telling me that Resist C15 Super Booster Serum is amazing. It is a light weight anti-aging liquid that also brightens while firming the skin and fading dark spots. Thanks to this month's box I was able to finally try it before buying and this stuff really is pure gold! I have to say that July's Birchbox has by far been the best box I have received. Fourth of July!

Happy  4th of July!! I hope everyone had a wonderful fourth like I did! Not only is it
