Dark Chocolate Covered Strawberries

As a little Valentine happy I made my homemade Dark Chocolate Dipped Strawberries with White Chocolate drizzle. I took these to work for my last full day as the manager at Fresh Ink. Before you lose you mind I have not left them for good. What does that mean for you? It means there will still be fun pictures of fabulous stationery and all of my favorite new candles and small gifts! I couldn't leave them just yet. I should also let you in on the wonderful news I received last week...I got accepted into Nursing School!!! Also along with that I started a new job with an amazing and very accomplished doctor here in Jackson. Anyway lets get down to the recipe since I know that is what brought you here!
Dark Chocolate Covered Strawberries:
Ingredients:
1 bag Ghiradelli dark chocolate chips
1 bag Nestle Premier White Morsels
2 packages of strawberries

Directions:
1. Use a double boiler to melt your dark chocolate chips.
2. Melt them over a medium heat, that way the chocolate melts and stays smooth and not clumpy.
3. Use a damp paper towel to clean your strawberries.
4. Then dip your strawberries into the melt chocolate.
5. Let cool on wax paper.
6. Once cooled, melt the premier white chocolate.
7. Use a fork to drizzle the melted white chocolate over the strawberries.
8. Let cool.
9. Enjoy!

Southern Chicken with Herbed Mushroom Sauce

This makes a wonderful Valentine's Day meal or really any date night! I made this on a week night and it wasn't too troublesome but I would recommend making it on a night where you have a little more time to prepare it. Mine still turned out amazing but I was just feeling like I had to rush to get it done quickly. This entrée makes such a pretty presentation that I would not hesitate to serve this at a dinner party. Hearts of Red Velvet

While watching the Grammy's last night I made these Red Velvet Mini Heart Cakes with Cream Cheese Frosting. I love baking Valentine's treats because they are so fun to decorate! These were going to be Red Velvet Heart shaped Whoopie Pies but halfway through I decided to just icing and decorate them instead. I hope you enjoy making these for your special someone or family! Red Velvet Mini Heart Cakes:
Ingredients:
1 box of Duncan Hines Red Velvet Cake Mix
3 large eggs
1 cup water
1/3 cup vegetable oil
1 8oz. package cream cheese (softened)
1 stick unsalted butter (softened)
4 cups confectioners sugar
1 teaspoon vanilla extract
* you will need a heart shaped cookie cutter

Directions:
1. Preheat oven to 350 degrees.
2. Follow directions on the back of the box.
3. Bake in a 13x9 inch pan for 25-30 minutes.
4. Remove from oven and let cool.
5. While it is cooling mix softened butter and cream cheese together in mixer until smooth. 
6. Slowly add confectioner's sugar and vanilla to the mixture. 
7. Mix until smooth and creamy.
8. Use the heart shaped cookie cutter to cut out the small cakes. 
9. Frost and decorate. 
10. Enjoy!
