Potato, Bacon, & Cheese Soup

This soup is the perfect cold weather soup. It is filled with chunks of potatoes, tiny stripes of bacon, and topped with melted gooey cheese! Basically it is comfort and warmth in a bowl. Make sure you check out the recipe below. I promise it is worth the little bit of prep that goes into this recipe! Happy 2015 by the way! I am back and sorry I was gone for the holidays but I was trying to be able to spend as much time as I could with friends and family this year. I am happy to be back though because it has been too long.

Potato, Bacon, & Cheese Soup:
Ingredients:
2 1/2 lbs. potatoes, peeled and diced into bite size pieces
1/2 package of uncooked bacon finely diced
1 medium onion diced
2 cloves minced garlic
8 cups milk
4 cups water
4 chicken bullion cubes
1 teaspoon black pepper and salt
3/4 cup salted butter
3/4 cup flour
1/4 bunch freshly chopped parsley
1 cup heavy cream
**For garnish: shredded cheese, bacon bits, and chopped green onions**

Directions:
In a sauté pan cook bacon until crisp.
Drain bacon grease and set bacon aside.
Saute onion and garlic in 2 tablespoons butter for about 5 minutes.
In a large stockpot add the sautéed garlic, onion, milk, water, bullion cubes, salt, and pepper.
Cook over medium-high heat until mixture is very hot, about 8 minutes stirring often.
Do not let t he mixture boil.
In a small saucepan melt remaining butter.
Add flour and mix well.
Cook over medium-low heat until mixture bubbles, stirring 2-3 minutes to make a roux.
While constantly stirring soup, add roux slowly until soup is thick and creamy, about 4 minutes.
Stir in parsley, potatoes, bacon, and heavy cream.
Garnish with cheese, bacon(if you have saved some for garnish), and green onions.
Serve hot!

Chicken Taco Soup

I have to apologize first for this post not being up yesterday. I know I promised some of you that it would be but I was having some technical and time issues, but don't worry here it is. This taco soup is extremely easy and everyone said it was some of the best they have had. This taco soup is perfect for the cooler weather and tailgating!
 
Ingredients:
4-6 Boneless Skinless Chicken Tenders
1 can Mild Rotel
1 can Chili ready tomatoes (can be found at Walmart)
2 cans sliced Black Olives
2 cans of Mexicorn
2 cans Black Beans
1 1/2 packet of Taco Seasoning
1 1/2 cup Pace Picante Salsa
 
Toppings:
Sour Cream
Shredded Cheese
Jalapenos
Avocado
Tortilla Chips
 
Directions:
1. Drain and pour all ingredients into the crock pot
2. I boiled my chicken before hand to make sure that it was completely cooked since this was my first time using a crock pot
3. Shred Chicken and add it to the Soup
4. Then, set it to 4 hours on high
5. Lastly, Enjoy!

Fall To Do List:

Fall has become my favorite season within the last few years. I used to love spring but I have decided that fall trumps spring. I love the weather, fashion, and holidays that it brings. It also lets you bake pies for new reason, make warm soups, cozy up by a fire, and spend more time with the ones you love. Since, fall officially started this past Friday it was time to make my list of things I plan to do this fall. Here is my list:

1. Go camping with good friends.

2. Watch at least one scary movie every week in October.

3. Carve a Pumpkin with Jay (our yearly tradition, you can see last years here).

4. Visit a real haunted house.

5. Make Cinnamon Sugar Pecans or Almonds.

6. Take a weekend trip with my man to celebrate our 3 year anniversary.

7. Drive the Natchez Trace with my mom to see all the leaves changing.

8. Have a weekly Girl's Night to watch "Scandal". Season 3 premieres on Thursday October 3 at 9/10c. If you haven't been watching it I highly suggest you catch up on the past two seasons on Netflix soon!

9. Go to a Pumpkin Patch.

10. Make my Christmas list before November.
