Mini Cinnamon Rolls

During the Holidays I always use a lot of Pillsbury Crescent Rolls but this Christmas I had some left over and decided to make Mini Cinnamon Rolls with them. I was not sure how these would turn out but I was pleasantly surprised at the outcome. These would be the perfect addition to any brunch or just the perfect Saturday morning surprise!

Mini Cinnamon Rolls:

Ingredients:
Cinnamon Rolls:
1 package of Pillsbury Crescent Rolls
2 tablespoons of butter, melted
1/4 cup granulated sugar
1 teaspoon cinnamon

Icing:
1/2 cup powdered sugar
1/4 teaspoon vanilla
1 tablespoon milk

Directions:
1. Preheat oven to 375 degrees.
2. Unroll crescent rolls and coat both sides of the dough with melted butter.
3. In a small bowl, combine sugar and cinnamon.
4. Cover one side of the rolls with the sugar mix and roll each into a spiral, with the sugar coated side inside.
5. Place rolls in a small muffin tin.
6. Cook 10-12 minutes, until golden brown. Let stand 5 minutes.
7. In a small bowl, combine powdered sugar, vanilla, and milk until smooth.
8. Drizzle icing evenly over warm rolls to allow it to melt.

Homemade Orange Sweet Rolls

This past weekend Jay and I went to Cold Water, Mississippi to a friend's cabin. I thought what would be more perfect than some Homemade Orange Sweet Rolls for breakfast Saturday morning. I have had the Pillsbury brand Orange Sweet Rolls but have never tried to make them myself. Well turns out this recipe is not very hard but just a little time consuming since the homemade dough takes two and a half hours to rise but other than that it is fairly quick. An added bonus to this recipe is that you could make these ahead of time and put them in the fridge or freeze them for a few months. These would make a prefect Christmas morning breakfast treat! I hope you decide to try them out. The exact recipe I used can be found here. See you tomorrow!
P.S. The recipe seems very complicated because there are a lot of steps but that is only because it is very detailed which makes them easy to make.

Paleo Pancakes

I'm sure you might be asking what is Paleo? Paleo is called the "Caveman Diet" and is all about natural foods such as game meat, fish, vegetables, wild fruits, eggs and nuts to help achieve great health and a perfect physique. This is really all about cutting out processed foods and eating clean making it very healthy and good for you! Well, I am not on a Paleo diet I do enjoy using some of the recipes because they are so healthy. I have been hearing and seeing recipes for these yummy simple pancakes everywhere recently. I finally decided I would try them!

Ingredients:

Blueberries
1 Large Egg
1 Large Banana
* Recipe makes 3 pancakes

Directions:
1. Peel and slice banana
2. Mash banana and add egg
3. Mix until fully combined
4. Heat a skillet on medium.
5. Spray with cooking spray.
6. Fill a 1/4 sized measuring cup with the pancake batter.
7. Pour measuring cup onto heated skillet. Add blueberries (5-7)
8. Cook each side until lightly brown.
9. Enjoy!

I think it would be fun to experiment with them by adding dark chocolate chips, sliced almonds, oatmeal, vanilla whey protein, or peanut butter. I drizzled mine with a little honey but they would be good with sugar free syrup or plain. I did add a little cinnamon to my batter. Also, if you are wondering if they taste like bananas to me they really didn't which was surprising. Lastly, each pancake is a filling 65 calories!
