Stuffed Bell Peppers


I had some ground meat that I needed to cook but I wanted something healthy at the same time and not just a hamburger. I stumbled upon these Stuffed Bell Peppers on Skinnytaste.com.  Once I saw these I knew this was the recipe I wanted to make. The ingredients are also stuff that pretty much everyone already has so it is healthy and inexpensive. How much better can it get? Well just wait…


What You Need:
one pound of lean chopped turkey meat
1 clove of garlic (minced)
¼ onion (minced)
1 tbsp chopped fresh cilantro or parsley
1 tbsp garlic cumin powder
1 tbsp garlic powder
salt to taste
3 large red bell peppers
1 cup fat free chicken broth
¼ cup tomato sauce
1 ½ cups cooked rice (white or brown)
olive oil cooking spray
¼ cup reduced fat shredded cheese (your pick on type)
tin foil for covering
What I Added:
1 can of black beans
1 small can of corn
 
What To Do:
Preheat oven to 400 degrees
Spray a little olive oil cooking spray into a medium to large size sauté pan, heat over a med. flame
Add your garlic, onion, and cilantro to pan
Let it sauté for about 2 minutes
Add the meat and season with the garlic powder, cumin powder, and salt (to taste of course)
Brown the meat for a few minutes just until the meat is cooked completely
Make sure to be cooking your rice in a separate pot because it usually takes about ten minutes for that
Add ¼ cup of tomato sauce and ½ cup of chicken broth to meat
Now let it simmer for about 5 minutes
Heat up corn and black beans in a small pot
Combine the meat (I drained off most of the excess oil), corn and black beans, and rice together
Cut the bell peppers in half length wise (wash and remove seeds)
Place in a baking dish and fill with the meat and rice mixture
 
Pour the rest of the chicken broth into the bottom of the baking dish (1/2 cup)
Cover with foil and bake in oven for 35 minutes
Remove and cover with cheese to melt
Enjoy!!
 
This recipe is not only healthy and inexpensive but it is FILLING. We each were only able to eat one. Now, I know some of you may not be a fan of bell peppers but even if you are not you should give it a try. Jay (my boyfriend) really does not even like bell peppers and he really liked this recipe because the chicken broth in the baking dish makes the bell peppers very soft. It was very delicious and it tasted like a Mexican dish so if you are craving Mexican try this!  Hope you Enjoy!!
